Ingredientes

  • Una cajita de frijoles negros
  • ½ taza de maíz
  • 3 cucharadas de aceite de oliva
  • ½ cebolla blanca
  • ½ pimentón rojo
  • 1 cucharada de sazonador de tacos
  • ½ kg de queso mantecoso rallado
  • Mantequilla
  • 6 tortillas de trigo
  • Crema ácida
  • Cebollín
  • Sal y pimienta a gusto

Preparación

  • En una olla pequeña agrega el aceite de oliva. Cuando esté caliente, saltea en él la cebolla y pimentón cortado en trozos pequeños. Revuelve constantemente y cocina por unos 5 minutos.
  • Agrega los frijoles, maíz, sazonador de tacos, sal y pimienta. Baja el fuego y cocina por 7 minutos, revolviendo de vez en cuando. Reserva.
  • En un sartén antiadherente agrega ½ cucharada de mantequilla. Cuando se derrita, coloca una tortilla de trigo y encima de esta agrega una capa de queso, una de frijoles y otra de queso a un lado de la tortilla. Dobla tu tortilla a la mitad y baja el fuego. Cocina por unos 3 minutos y con mucho cuidado voltea tu tortilla para que dore por el otro lado. Repite el procedimiento con las tortillas restantes.
  • Sirve con crema ácida y cebollín en trocitos. ¡A disfrutaRRR!
