Pinot Noir

Fruity, fresh, with well-balanced acidity and soft tannins. Every day is Pinot Noir day!

95% Pinot Noir, 5% Syrah

Origin:

Central Valley.

Vinification:

Pre-fermentative maceration for 2 days to extract color and aromatic properties typical of the variety. Fermentation was carried out at average temperatures not exceeding 25 °C. Pumpovers took place 3 to 4 times per day to ensure good extraction of aromas, after which the wine was quickly separated from its skins. Malolactic fermentation occurred in untoasted or lightly toasted wood, bringing out the wine’s fruity characteristics and increasing volume on the palate.

Tasting Notes

Ruby-red in color and of low intensity.
Small red fruits are present such as ripe cherry and raspberry.
A fresh, fruity wine with ample acidity and very smooth tannins.

Ideal to pair with game birds, soft cheeses, and pasta.
